I’ve had a few people ask how I make these, so I thought I’d give a quick run-down as to what I put in mine:
» Romaine lettuce; usually about half the bowl.
» sauteed red onions & green peppers
» medium rare flank steak, cooked with olive oil & cumin
» sliced avocado
» homemade salsa: tomatoes, cilantro, red onion
» small handful of mozzarella cheese; dollop of sour cream
» & now for something controversial: cilantro lime rice*
Layer in a bowl, squeeze some lime juice over top, & dig in!
*To make the rice, steam a cup of white rice with a tablespoon of lime juice & a good amount of cilantro.
